|
Ohmic heating is a process in which alternating electric current is passed through liquid-particulates foods to heat them. The heating occurs in the form of internal energy generation within the product. Voltage is applied directly to the electrodes at both ends of the product body which cause internal energy generation within the food material. This technology has wide range of applications in the area of food processing. In the present investigation, a laboratory scale ohmic heater was developed to use it for extraction of rapeseed oil. |
